Your best bet during warm, dry weather are dam released places: Ouachita, Remmel to Rockport, the Little Red coming out of Heber Springs, etc. Those are great places to practice in the summer. The Spring near the Missouri border will have water year round too, but on weekends it's not a family place.

For water levels, check out Fish's amazing auto-updating Ozark whitewater gauge page:

Be sure to read descriptions and pay careful attention to ratings (Class I okay for newbees always, Class II okay too depending on how newbee you are.)
