Sadly, sometimes I turn upside-down in my kayak. Sometimes there are rocks. Sometimes I hit those rocks with my hands while upside-down. Sometimes it hurts and removes flesh from knuckles.

What should I wear for hand protection? Sounds like Glacier Gloves are the way to go for cold-weather paddling; maybe for protection, too? NRS Creek Gloves get real poor reviews for durability so I'm going to avoid those.
