recipe for Logan Bread

Post by G George » Sun Feb 28, 2010 6:45 pm

I used to do alot of caving, and found this recipe in a book entitled,"The Jewel Cave Adventure" by Herb & Jan Conn
Excerpt from book, verbatim.

"People often ask us what we take to eat in the cave. Our lunches consist almost entirely of a loaf we bake ouselves, a combination of Logan bread(a mountaineer's staple) and applesauce cake.
Because those who try it usually come back asking for the recipe, it is given below. We recommend it for any sort of outdoor lunch. It is concentrated food with a minimum of bulk, and it is palatable even when water is scarce. In our relatively dry climate it keeps for a week or more without refrigeration, protected only by a plastic bag. It may crumble partially in a tight crawlway, but the crumbs are good eating too.

Mix and bring to boiling point:
1&1/2 cups water---------12 ounces
1&3/4 cups sugar---------12&1/2 ounces
2 cups applesauce -------16 ounces
1/2 cup molasses---------4&1/2 ounces
2/3 cups honey-----------7&1/2 ounces
2 cups shortening---------15 & 2/3 ounces

Mix and then add to above:
8 cups whole wheat flour------32 ounces
2 & 2/3 cup white flour--------12 ounces
2/3 cup powdered milk--------- 2 &1/2 ounces
1 teaspoon salt
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon ground cloves
1 teaspoon ground nutmeg

The weights are actual weights, not fluid ounces, to save on measuring cupps and clean up,

If you like, add nuts, raisins,or whatever else suits your fancy.
Fills 3- 8" square cake pans, greased, or muffin tins whatever.
Allow room for moderate rising, sprinkle top with cinnamon, or powdered sugar"
Preheat oven to 300 Degrees, bake for 1 hour or till firm to touch in center.

We add 1 cup peanut butter, mixed dried fruit, dried cranberries, nuts, etc. Comes out great. wholesome, hearty, and filling food that doesn't have alot of ingredients to spoil.
I have taken this on week long floats with no problem.

I hope you all try, and enjoy this wonderful bread.
Any questions or comments will be appreciated, and answered.
Good Luck and Happy Eating.
