Looking for a hummus recipe
Does anyone have a killer hummus recipe you’d be willing to share? We’ve been trying different recipes and haven’t found quite what we are looking for.

If you ever ate an NOC river lunch, bet you ate some of this recipe. I am not a vegetarian, but I always put a thick layer of this hummus on my river sandwiches.
An NOC Original Recipe
Long a favorite of Chattooga River guests, both vegetarian and otherwise is our delicious two-bean hummus. This peppery spread makes a hearty sandwich filling or a dip for carrots, celery and crackers. It's also loaded with fat-free protein to keep your energy up for paddling.
This recipe makes enough for 6-7 raft trips. The Chattooga Chef recommends using Numer 10 cans of beans, rinsed.
I. In a food processor, pulse:
a. 1/2 an onion
b. 3 Tablespoons garlic
II. Add the following ingredients and pulse:
a. 4 Tablespoons lemon juice
b. 1 teaspoon black pepper
c. 1 teaspoon salt
d. 1/2 teaspoon cayenne pepper
e. 2 teaspoons cumin
f. 1/4 cup parsley
III. Add the following and pulse again:
a. 2/3 can black beans
b. 1/3 can garbanzo beans
c. 1/3 cup tahini
IV. At this point, pulse to the desired consistency. You can add in some of the black bean water if the mixture is too thick, but remember, too thin a consistency is not good!

Rob, just off the top of my head as I usually just wing it:
I can of good garbanzo beans (drained but reserving the liquid)
1/2 Better quality Tahinni paste
FRESH lemon juice (1-2 depending on size and juice yield)
FRESH ground black pepper to taste
Kosher salt to taste
Garlic powder or minced fresh garlic (two large cloves)
In food processor, place beans, lemon juice, pepper, salt, garlic powder and small amount of reserved liquid. Begin to pulse slowly. Stopping as needed to scrape down mixture. Continue this process adding juice until you reach the desired consistency that you like. Adjust seasoning if necessary.
You can also add some drained roasted red peppers in amounts to convert it to a red pepper hummus.
This is just a basic recipe to work from.

I go with basically Roger's recipe, but I go lazy and usually leave out the Tahini.
I also add some olive oil and run it in a blender instead of a food processor, especially if the canned beans end of being crappy they can be a little grainy in the food processor; comes out a little thinner, so works better for dipping than spreading.
When I get tired of it tasting the same I'll sometimes add hot sauce or rice wine vinegar.

Zach, I like the rice wine vinegar idea, we basicly used a scaled back (quantity) version of the Chatooga recipie, but wanted to "kick it up" a bit but wasn't sure how with what. The roasted red peppers sound good too!
