camping menu
ok... so far most menus have been on the minimalist side. Or maybe open a can and heat up. Cereal in a ziplock. Part of this problem is picky kids. Where can I find some good camp meal ideas? I have a small burner that works easy enuff. But am finding it hard to think outside of bringing precooked stuff to heat up. That does work of course. Know where I can find some ideas or suggestions?

How old are the kids? If they are not to little it is hard to go wrong with the classic-hot dogs and smores on a green limd over the camp fire.

Clif,
BAVARIAN POTATO PANCAKES !
My highjacked famous recipe for these appeared in the ACC newsletter a couple of years ago. I'll try and PM it to you later today. At any rate they are just great with breakfast, and can also be used as a side dish at supper. You can mostly make them at home then easy fixing at the camp.
You might also want to check out some of Phylis Spears (Ark.Game&Fish)
cook books, she's the first lady in Ark. camp cooking in my book and she
advocates fixing many things ahead of time for ease of prep.
Best Regards

Re: camping menu
Clif,
Is this menu needed for camping in general or overnighting on the river? The missus is a fantastic cook (one of the reasons I weigh 245) and she prepreps stuff.
Or to quote my 12 year old daughter "bacon goes with everything".

Re: camping menu
Jim, send it on. Sounds great.
Kids are 5 and 10. Pleasing both is part of the dilema here. Prefab is the ticket. Have it all ready just cook it up. Car camping mostly is our style. I remember when we were little and mom had a big ole footlocker we could barely carry. That was the kitchen and it had everything in it..... cept the dishwasher. Over nights on the river and more compact the better.
Ms Spears would be a good source. Just thinking mainly of those 2 or more days out when sandwiches and snacks start getting old. Maybe I need to do one of those western river trips and first hand witness. We are kinda limited at home, I guess and not a wide variety of menus, picky kids in part, lots of use of the grill being another factor.

Re: camping menu
If using the grill is an issue, you could try something like this:
I use the charcoal version and its a Weber so you can't go wrong! Its pretty easy to pack, even in a canoe, the legs fold up over the lid to keep it in place. I just pre-load it with charcoal for a 'nighter, bust it out for dinner, let it cool, put the legs over the lid to lock it in place, and carry out all the charcoal ash next day. You can wrap it in a trash bag or something if you want. No fuss, no muss, and you can grill the entire meal if you want!
I have also used it as an elevated fire pan for a small camp fire with the same advantages. Just haul your ash out of there! LNT Baby!

Re: camping menu
If you want grill, find someone who is throwing away a small grill like a weber and bogart the grate. doesn't weigh much and fits easy in a canoe. When its time to cook all you need is a campfire and a few rocks to support your grate.
Re: camping menu
If you have a dehidrator you can dehidrate meat or anything. It makes space and reduces weight. It is also alot cheaper than buying mountain house or outher brands that are already dehidrated.
One of these days we will be able to run the Cadron without seeing a tire.

Foil dinners are the way to go. You can make them up at home then freeze them for use latter. Your probaly gonna have a camp fire so you'll have the coals ta cook with.
