Owl, would this be a good fit for someone 5'11" and about 185-190lbs, who's an absolute beginner?

As you can see from the specs, a person of the height and weight you describe is within the recommended range so, physically, the boat would "fit". The Hero series of boats are certainly forgiving and suitable for beginners. I know several folks who had Heros or SuperHeros as their first boats.
Without knowing more about your paddling ambitions, skills, aggressiveness, etc. it's hard to say if the SuperHero would be a good choice. The SuperHero is great for down river paddling and bigger water but isn't so good for playing the river IMO. I also have a Jackson 4Fun and paddle that boat almost exclusively as it fits my style better than the SuperHero.
I see you're in Siloam. There may be some NWA boaters who have SuperHero you could try at the kayak park. You may want to ask around some.

I will ask around. All I see there, usually, are playboats though. I'm sure we'll end up with playboats sooner or later, since we're 15 minutes from the WW Park, but right now want to get us roll'en and going on some trips with the Club.
I got my son a Superhero 2013 (good deal used), and my youngest an old Neckie Jive, because they show up on a list of good beginner boats. The list said that the hero series had three versions over time, and said that the second and third versions were good for beginners. It didn't tell me what years the versions came out though. That's why I asked.
